- Worked under acclaimed chefs Marcus Samuelsson and Terrance Gallivan, getting promoted from garde
manger to lone pastry cook to saute in a matter of months.
- Served as lone saute and pastry cook for majority of the time, cooking for brunch that averaged 120-180
covers, and dinner services averaging between 50-140 covers.
- Was responsible for daily prep, including sausage and pasta making, as well as continued maintenance and
cleanliness of all areas.
- As only pastry cook, accountable for all related tasks, in addition to savory items such as terrines, oysters,
and soups. Contributed to concepts in this area.
