Oversaw the design, construction, development and opening of THREE Restaurant, Turfside Grill, and Draper University Cafeteria
for managing partners.
Directly managed a complete remodel and rebranding of Astaria Restaurant into THREE Restaurant and Bar.
Managed a complete build-out of Turfside Grill, a QSR at Sportshouse in Redwood City, a new entity for Astaria LLC.
Managed a build-out of the cafeteria for Draper University, an entrepreneurial school located in the former Hotel Benjamin
Franklin.
Directly responsible for all front of house materials at THREE, SH, and DU.
Hired and trained all FOH staff, a total of forty-two people, including six managers.
Developed and cultivated a unique beverage partnership program with Bacardi USA, Rodney Strong Vineyards, Twomey

GENERAL MANAGER
Over the course of nine years, directly responsible for hiring and training 100 FOH staff and ten managers, keeping turnover well
below industry standard.
Grew total sales at roughly 15% per year for the first five years at Astaria.
Wrote and cultivated a 150 bottle wine list that earned eight consecutive Wine Spectator Awards.
Responsible for all publically dispersed writing, including press releases, advertising, and blogs.
Conducted Quarterly reviews for all staff and management.
In conjunction with ownership and Chef Tony Flier, implemented a concept shift toward more casual atmosphere and a
focus on American fare.
Wrote and implemented, “Comfort Service”, a model that emphasizes anticipation of needs rather than technical precision.
Directed concept for over four years, growing total sales over that time period of nearly 80%, with seventeen quarters in a
row of positive cash flow.
