• The majority of my time spent serving as a slaughter inspector in a red meat plant requiring
the exercise of judgment in the full range of slaughter inspection functions. A portion of my
time is spent performing offline duties verifying that the establishment is operating in
compliance with regulations.
• My primary duties include, but aren’t limited to, inspection of slaughtered animals to determine
carcasses are void of pathological contaminants and any unsanitary conditions that would
render the product unfit for human consumption. These inspections are performed on a
rotational basis by marking visual, tactile and/or incision inspections of heads, viscera,
carcasses and edible offal. All abnormalities I detect in the head, viscera or carcasses that
would potentially deem product unfit for human consumption are railed out for disposition by
the Supervisory Public Health Veterinarian on duty. Duties also include condemning portions
that cannot be corrected through trimming. When checking carcasses zero tolerance.
• Additional duties include identifying major and minor causes of contamination and pathology
consisting of pyaemia, lymphoma and tuberculosis, in addition to many other conditions. I also
instruct personnel to hold carcasses for further inspection, or if needed, rework any carcass or
part that does not meet Agency standards and regulations.
• Also performed on a routine basis is verification the plant is adhering to the Humane Handling
Act (HATS Humane Animal Tracking System) and inspection of live animals to assess the
appearance and behavior to ascertain nothing appears abnormal.
• My off-line duties involve the verification of the establishment’s regulatory compliance with the
pathogen reduction. Sanitation Performance Standards (SPS), Sanitation Standard Operating
Procedures (SSOP), Hazard Analysis and Critical Control Point (HACCP), food security and
other requirements involving slaughter and or processed products.
• My responsibilities include identifying major and or minor causes of contamination through
the inspection of floor cleanliness and inspection of equipment sanitation in addition to
inspecting workplace utensils are properly cleaned and in sanitary condition for use. If
infractions are discovered I take the necessary steps to ensure corrective actions are taken
immediately.
• On a daily basis, I interact with plant foremen and other supervisors to discuss SSOP
instructions and cleaning up undesirable situations. This includes calling attention to
employees of the plant or department that may not meet CCP’s, clothing regulations
standards.
• On a routine basis, I time the line speed to determine if the work is moving too fast to
permit proper inspection and sanitary procedures to be carried out in a safe and effective
manner. In the event that major repairs concerning replacement of broken and unsanitary
equipment needs to be made, notification is immediately made to my supervisor or higher
grade inspector.
• My work ethic consistently sets new standards of quality for other to strive for. My
inspection abilities remain consistent with the current FSIS mission, policies, pertinent
guidelines, requirements and instructions. I consistently strive to establish priorities as
necessary to ensure completion of any project I start.

• While employed by Tyson Foods Inc., as a Quality Assurance Representative, I oversaw
the process of deboning chicken breasts to ensure precautions were taken in order to
produce a wholesome product. I also verified net/gross weight, labeling and fat content of
all chicken products in accordance with contractual requirements before shipping. This
position was important in developing my talents in assuring quality in chicken and chicken
products. I have worked directly with the inspector in charge of the plant to correct
deficiencies quickly and tactfully.
• It was important to recognize abnormal conditions in all types of meats. These include, but
are not limited to, freezer burn, putrid smell and parasites. As a helper my responsibilities
included inspecting chicken quarters for anything that might make them unfit for human
consumption. Cutting chicken quarters down into select cuts of meats in accordance with
state and federal regulations. The added task of supervising four prep workers gave me
the opportunity to improve my sanitation and food handling skills. The time spent here
allowed me to become proficient in recognizing defects in meat and meat products.
