Management - daily/monthly cash reconciliations, mark ups/margins, preparation of end

of year figures to be signed off by accountants. Weekly hours for staff to provide

accountants with information to run payroll. Payment of all suppliers. Weekly banking.

P reparation of cook-safe, health &safety policy. Ensuring that all licences were relevant

and up to date.

Shut the bar and restaurant between January & June 2001 for a major refurbishment,

oversaw the investment of £100,000+. Extended the bar area and built an outside beer

garden. Changed the décor in the bar and restaurant.

2008 renegotiated the loan with the bank to realise some more working capital.
