Publix Dairy Manufacturing; manufactures 68 SKU’s of fluid products, and 69 favors of Ice Cream/frozen
desserts. As the General Manager my responsibilities were for all facets of the Operation supplying 1070 Super
Markets in 5 states:
• Managing a 250,000 sq. ft. Facility product over 536 million pounds of fluid products, and 11.5 million
pounds of Ice Cream annually.
• Ensuring compliance to all federal, state, and local regulations including PMO regulations, HACCP,
SQF level 3, GMPs, lock out tag out, occupational safety and health administration, right to know,
process safety management, and risk management process.
• Optimizing production lines to ensure yields and throughputs in all Dairy operations, Fluid Receiving,
Fluid Processing, Mix Processing, Fluid Filling, Ice Cream Freezing and Packaging, Blow Molding,
Shipping, Maintenance, Part, Industrial Refrigeration.
• Development of new products, and production lines, instrumental in the development of a new beverage
product line equating to $37 million in annual sales.
• Instrumental in the design and installation of a complete Ice Cream production line from concept to the
first saleable product in less than 6 months.
• Development of Sanitation procedure allowing 4 additional day’s shelf on fluid products.
• Development of process improvements increasing throughput by 9% on 5 production lines.
• Serve on the IDFA Board of Directors Milk Industry Foundation and International Ice Cream
Association.
