INVENTORY MANAGEMENT:
. Daily record keeping/accounting, managing sales handover and
maintaining of reports.
. Managing daily food/paper costs by reducing wastes, serving better
products and accurate processing of data with proper trouble shooting
of problems in reports.
. Controlling Yield/Variances losses of food & Paper by ensuring on
floor- procedures are at 100%.
. Ordering the right amount of products for the restaurant so as to
maintain right stock levels with best quality products served to guest
and blocking least capital.
. Accurate closing of months and financial years effectively and timely
with proper trouble shooting of reports.
. Succeeded in lowering the base food cost and food cost controllable
components.
. Made sure that major chunk of P&L is taken care with better gross
margin by reducing food cost with proper procedures.
SCHEDULING
. As majority of employees are students, so made sure the studies are
not affected by their work.
. The employees were given shifts in accordance of their and restaurant
staffing needs.
. Made sure the restaurant is well staffed in all day parts so as to
deliver 100% QSC to guests.
. Made sure the restaurant was staffed as per the sales projections for
the day and there are adequate employees at all the times to carry out
the daily tasks.
. Made sure the restaurant targets for labour costs were achieved
consistently and they contributed to restaurant's P&L positively.
. The employees were given OFF in timely manner.
TRAINING
. Made sure the employees training is done in timely and effective
manner.
. Succeeded in promoting 5 employees from crewmember to training squads.
. Succeeded in promoting 5 training squads to floor managers.
. 8 training squads currently under training to become floor managers in
next 2 months.
. Made sure the employees are trained 100% to deliver 100% QSC to
guests.
. Made sure the restaurant grades of mystery shoppers showed a delta in
their scores.
. Successfully recruited and hired highly motivated employees interested
in guest service and self-development.
. Reduced the employee turn over in the restaurant by 30%.
