Objective: To complement my income as a food vendor and continue in a
field that I have worked in all my life. This position seems a perfect fit for
both the needs of the employer and me. I work my business from april to
october on weekdays from 10am – 3pm. I am available all weekends, all
holidays and all evenings.

Self employed from 04/07 until present. I own and operate a hot dog cart on

I prepared and cooked a variety of all meal foods for 600-800 students. I
maintained and controlled all aspects of food preparation (sanitation, temps,
safety). I operated all types of institutional kitchen equipment.
My supervisor was Brad Foley and I left this position in order to open my
open business.
Aramark (at the Rock Island County Jail), Rock Island, IL 11/02 until 01/05
I prepared, cooked and supervised a kitchen staff of inmate trustees. I taught
them and assisted them in the basic food skills necessary to feed the inmate
population (usually 250-350). My supervisor was Kim Anderson and I left
this position for a position more suitable to my abilities.
Holiday Inn, Bettendorf, IA 08/01 until 09/02
I was executive chef. I planned the menus, ordered food stuff, maintained
inventory, cooked and prepared a variety of meal and banquet foods. I
supervised a staff of 24 and scheduled employees and controlled food costs
for maximum profit. I left this position when Holiday Inn was bought out by
Bennigans restaurants and the entire staff was released.
Knights of Columbus, Rock Island, IL 05/97 until 05/01
In this position I learned my basic cooking skills under the chef who hired me
as assistant cook. I assisted the chef in food preparation for large banquets,
learned food sanitation, safety, and temp control, the basic cooking “process”
and how to operate most kitchen equipment, proper food storage and clean
up. I left this position when the Kof C went bankrupt.
