1- Reviewing the Hazard Analysis and Critical Control Point (HACCP) as an integrated food safety system to cope with the latest knowledge and recent updates of controlling physical, chemical and biological hazards associated with semi-hard cheese slicing and grating production 2- Re-assessment of sliced Edam cheese shelf life by microbiological monitoring of the growth of yeasts and moulds commonly associated with cheese spoilage by conventional culturing techniques from cheese packed in modified atmosphere (MAP, CO2:N2 mix, O

2 less than 1%). Physico-chemical and

sensory analysis were also made from representative samples at different time points. Data were further integrated using predictive microbiology tools in order to estimate the expected shelf life and whether it can be further extended. The study was significantly important for the company in its growing expansion and potential to open into new and somehow far markets where shelf life of food products plays a crucial role in ensuring the safety and keeping quality of products along their complex distribution channels.
