Employment History:

Director of Catering 8/2014-12/2018 Aramark, Inc. @ Randolph College Lynchburg, VA

The responsibilities of this position were varied and changed from day to day depending on the event(s). The Director was charged with soliciting new business, and maintaining that business. The Director booked that business, organized the event(s), planned the menu(s) worked within the clients budget constraints, ordered the linens and/or alcohol, scheduled staffing, oversaw the actual event set-up(s), attended and serviced the event(s), and oversaw the tear-down and evenings end(s), The Director, furthermore, coordinated the services, the venue, the client, and the Kitchen. It was very tedious undertaking to effectively manage all of those details, let alone several at the same time or in succession, not to mention several in the same day or numerous events day after day after day.

The Director was required to provide numbers for monthly forecasts. Another integral facet of the Directors duties included long range planning; I had weddings planned into 2020. The Director helped maintain Randolph College’s ABC license; it’s rules, regulations, and official managers and handled all of the alcohol ordering and check requests. The Director also worked hand in hand with the executive chef and pastry chef to develop recipes to adhere to the clients food parameters, i.e. gluten free, vegan, farm to table, organic, specific allergies, etc.

In addition, I assisted “Dining Services” with hiring of dining personnel, serving as a Supervisor for Dining Services, and as the Pastry Chef. I was also honored to serve as a Private Chef to the College President and his wife on occasion.

This position, as well as the others, require extreme organization, the ability to multi-task, the desire to stay five steps ahead of everyone else, the need to have everything prioritized, the skill to anticipate a problem before one exists, and to thrive in a fact paced environment. This is who I have developed into out of necessity.

Responsibilities encompassed maintaining excellence in all aspects of service to maximizing member dining experiences; hiring, training and the management of the dining and bar staff, monthly bar inventory; scheduling and payroll supervision for my departments; estimating food costs; and the planning and execution of special events for members. The addition of management duties for the Poolside Café and Swimming Pool, as well as, overseeing the kitchen in the absence of the Chef, were also assigned. Proficiency in Word and Excel were mandatory.
