Plan and supervise daily operation of the cost control office, food & beverage stores, receiving, and purchasing departments, through guiding and administering concerned personnel in the execution of the assigned tasks and duties.

Detect, investigate, and report any undue variances in receiving, issuing, and transfer-reports, or any other documents, to the Financial Controller and / or the Executive Chef.

Control daily, weekly, and monthly reports before distribution, and rectify any mistakes.

Ensure daily issues, requisitions & receiving reports are entered correctly & timely into the system.

Check daily transfer, credit, and debit amounts are correct, and entered under the correct outlets.

Administer and check the entry of any additional credits and/ or debits into the food & beverage cost programs. Verify and approve the food and beverage cost reports prepared by the Assistant Cost Controller and the Cost Control Clerk.

Make sure daily & monthly food & beverage cost report is prepared, finalized and distributed as per schedule. Perform regular, as well as event related costing analysis and cost transfer allocation.

Assure all invoices are stamped and signed by the Receiving clerk before forwarding it to Accounts Payable and direct purchased items are signed by the Department concerned.

Carry out spot check to ensure that goods are received as per specifications; ensure that Receiving Clerk does not receive goods without a purchase order or purchase list as well as holds files for current purchase orders and purchase lists for goods not yet received.

Responsible to oversee general accounting functions, passing monthly JV, bank reconciliations and balance sheet reconciliation. Finalizing the monthly account and preparation of profit & loss statement. Preparation of monthly reports for management and Head office. Responsible for carrying out the routine accounting functions such as Books of account’s debtor’s statement, inventory control stock valuation, preparation of monthly trail balance and liaison with Banks. Income: To ensure that revenue figures are updated to the general ledger, Guest ledger and sale ledger are in agreement with general ledger and to ensure that guest ledger and deposit ledger are in agreement with general ledger and the night audit process is performed on nightly basis, General Cashier: To ensure that collection of the day is banked on daily basis and General cashier report is produced, verified and approved on daily basis by the DOF & also reconciled at least once in a month that all contractors for house funds are maintained with general cashier and copy with HR in associate file. Payroll: To ensure that contractual obligations (financial) are compiled with reference to accruals and provisions etc. in respect of all employees and Payroll is processed on a monthly basis and all related expenses are allocated and journal entries passed. And also that payroll head count agrees with the personnel department report. Cost Control: To ensure that Food, Beverage, Tobacco, and General Cost control reports are verified with General Ledger and to reconcile if there is any variance before closing the books for the month. Accounts Payable: To ensure that accounts payable is updated daily with previous day receiving reports and accurate coding has been put on the invoices and payment vouchers and petty cash expanses etc. and that creditors balance is in agreement with General Ledger.
