WORK EXPERIENCE

I had started my career in PARK HYATT, Chennai as a commis chef in the A La’ Carte kitchen and I had been working there from 2012 July 2nd to 2014 December 8th. I was promoted as a DCDP on 2014 October 1st. I was specializing in South Indian cuisine and Indian curries.

I was working with PLANET HOLLYWOOD BEACH RESORT, Goa as a DCDP in A La’ Carte as well as BANQUET kitchen and have been working here from 2014 December to 2015 November . I was specializing in South Indian cuisine and Indian curries.

I worked in 2 pre–opening properties. The first one was PARK HYATT, CHENNAI and the second one was PLANET HOLLYWOOD BEACH RESORT, GOA.

I was working with hotel Le Meridien, COIMBATORE in Ala carte kitchen as Indian DCDP. I was working here only for 2 months. After that I left this hotel because of personal issues and I joined with PASSION HOTEL as CDP in Indian cuisine. I was working in this hotel for 20 months.

Meanwhile I have got an opportunity to enter into UAE. I came to Abu Dhabi and working with a restaurant for 2 months by having an intension to find a job in star hotels with my past experiences. As my wish I got selected in Grosvenor house luxury collections by Marriott in Dubai. But I dint get the position as what I was, just because I don’t have the gulf experience. I accepted to it and joined here as former chef. This is because of the faith which I have on my work.

RESPONSIBILITIES

CDP in the sense ‘Head of the particular department (HOD). My duty is to supervise Indian section in the kitchen.

I should check the menu and make mise en place accordingly.

I should check all the foods are being followed according to the recipe.

I have to ensure that food has to be reached to the guest’s table with the hot plate as well as hot food.

I should ensure that the department is kept clean and maintain hygiene.

I should provide training and treat fairly the chefs who are all working under my control. I have to ensure that they are being trained well.

I should supervise the whole kitchen in the absence of sous chef.

I should check all the equipments of my kitchen is kept clean all the time.

I should ensure that the wastages to be reduced and I have to consider about the food costing, accordingly I have to plan the menu.
