Extensively involved in R & D work on millets such as processing, value addition and studies on nutrient components of millets. Apart from this, actively involved in the formulation of specialty foods from finger millet seed coat such as mineral rich ready-to-eat foods. Worked on bioavailability studies of minerals and exraction of Arabinoxylans and Squalene in different grains using HPLC.

Project Title: “Preparation and characterization of vitamin B1 nanoliposomes by high speed homogenization method”.
Abstract: The aim of this project work was to prepare nanoparticles containing vitamin B1 by the high speed homogenization method and to study their physicochemical stability. Phosphatidyl choline was used as carrier material. Vitamin B1 nanoliposomes were characterized by particle size, Zeta potential, Encapsulation efficiency, Differential Scanning Calorimetry (DSC), thermogravymetric analysis (TGA), Atomic Force Microscopy (AFM), and FTIR spectroscopy. Particle size and Zeta potential were evaluated for 28 days to study their stability.
