As a Culinary Specialist my main focus was developing young sailors who were in my division during my stay on the Pittsburgh. I had 8 junior sailors in my division and two senior sailors who I would answer to when it came down to Food Orders in port and out at sea, Cost per person for daily value of meals for each sailor on board. Food rations and portion sizes for daily nutritional values, and also special menus for officers on board and special guest traveling with officers and or ride along from Special Forces. My last year on the boat I worked directly for the captain as the captains cook one of the highest honors a cook can receive while his stay on the boat. I received this achievement from hard work and getting my sailors promoted through training and working hand and hand with them so we are always learning from one another.

I started out as a Kitchen Manager for Applebee’s in Lubbock, TX. At Applebee’s I was in charge of Kitchen Staff, Training, Truck Orders and Controls that pertain to the Kitchen. During my stay in Applebee’s I was quickly promoted to General Manager of the Temple, TX location for turning my kitchen retention to almost nothing, for controlling my food cost to a solid 28%, and passing two evaluations back to back to 85% of better scores at a location who failed the last 6 Brand evaluations.
As a GM for the Temple Location I was able to Train and develop all my managers under my watch and turn a handful of employees into shift leads at my location and other locations in my district. I am a firm believer in developing my replacement and knowledge is everything when it comes to my establishment, I want people who want to learn and be taught and make believers of staff who do not believe. I turned this location into a 5 million dollar store with the year before was just under 3.2 million. My job is to train, work hard and find/create sales for my store.

As a Business Consultant I over saw up to 41 Locations throughout the El Paso Market, My Goal is to make the Franchisees Profitable and continues to do so with outside the box thinking, I am the middle person for subway to the franchise. I train their staff on new menu roll outs or window changes, work with the managers on staff retention and how to read paperwork. While doing all of this I also am doing month evaluations on the locations to make sure everyone is following the Subway standards upheld from the cooperate level. If a location does not pass an evaluation then next month I know where to focus a little more time and energy with the manager at this location along with the owner.
