Ensure that the cutting wire is in the correct position for clean and precise cuts and for correct thickness. Weigh 10 cookies on each side of the conveyor belt and document those weights onto the quality worksheet. Make any weight or thickness corrections using the computer attached to the die and die head. At the oven: ensure cookies are at the correct temperature for food safety standards and that the diameter and thickness are correct as well as at the proper moisture level.
