BENIHANA RESTAURANTS INC., Southern, CA. 2010 - Present

REGIONAL MANAGER

Directly responsible for the P&L success of 13 restaurants located in southern California, Arizona and Texas generating sales ranging from $3.5M to $8M annually. Accountable for resolving financial, personnel, and operational problems impacting the effectiveness of these restaurant operations. Recruited, hired and trained management personnel and staff ensuring their success and development while preparing all personnel for future opportunities and growth within the organization. Maintained the integrity of food quality, organizational and cleanliness standards in order to achieve the highest operational performance. Director of Operations Third Street Restaurant Group -Yankee Doodles

Directly responsible for the P&L success of a privately-owned restaurant and sports bar venue generating $7M in annually sales. The 15,000 sq. ft. facility accommodates 800 guests and offers an arcade, billiards, patio dining, and large private rooms for special events. Authority to make all business decisions with respect to: budgeting, business development, marketing and advertising, staffing, product and menu planning, quality control, and facilities maintenance. Lead a team of 9 direct management reports, and a 98-person hourly staff. Negotiated and approved all contracts with vendors. Performed all business related matters with the city, county and state officials.

The Yankee Doodles venue has consistently been voted as the “#1 Sports Bar in Los Angeles” by CitySearch throughout tenure.

Increases total revenues from $4.8M to generating more than $6.5M within two years.

Developed and implemented management and new hire training programs that increased overall productivity and profitability while maintaining employee loyalty, retention, and corporate integrity.

DAVE & BUSTERS / JILLIANS, Hollywood and Arcadia, CA 2001 - 2006

Senior Operations Manager Dave & Buster’s (Arcadia, CA; 2003 – 2006)

Recruited to open and manage a new $15M, 62,000 sq. ft. multi-facility venue in Arcadia with 300+ employees. Designed business plans, including pricing objectives and internal controls for cost reduction. Established financial performance criteria and analyzed financial and statistical data. Coordinated all facility repairs and maintenance; i.e., authorized upgrades, managed the bidding process, and contracted services. Fostered excellent working relationship with all vendors and contractors.

Served as Chairman of the Safety Committee; ensured compliance with all state, OSHA, and regulatory standards.

Recipient of the “Wings Award” given to employees for recognition from guests for superior customer service, attention to detail, and prompt attention to all business matters.

General Manager Jillians (Hollywood, CA; 2001 - 2003)

Directly responsible for the P&L success of Jillians in Hollywood, a multi-venue operation comprised of a full service restaurant, bar, nightclub, and extensive entertainment services in a 28,000 sq. ft. facility with an 18,000 sq. ft. carnival area. Managed all functional areas, including strategic business development, forecasting, budgeting, sales, quality control, HR, facilities maintenance and administration. Led a team of 100 employees and up to ten managers.

Grew operations to generate nearly $6M in annual sales revenue.

Implemented a detailed training and development program for all management and support staff that improved Guest Service Evaluation rating from 58% to 91%, while reducing turnover ration to below 20%.

Developed and implemented sales incentive promotions that generated a 35% increase in comparable sales.

Ranked #3 out of Jillian’s 42 operations in the areas of P&L, Operational Performance, and Cost Control. Ranked the #5 facility for Jillian’s overall best operations nationally.

U.S. MARINE CORPS COMMUNITY SERVICES, Iwakuni, Japan 2000 – 2001

Developed and administered a $50M operating budget for the Business Operations Division encompassing retail facilities, clubs, recreation business activities (golf course, bowling, ITT, skills development activities), temporary lodging facilities, and bachelor housing. U.S. NAVAL JOINT SERVICES ACTIVITY / THE NEW SANNO, Tokyo, Japan 1997 – 2000

Deputy Director

Directed all day-to-day operations for this four-star, 149-room hotel facility. Supervised eight managers and indirectly responsible for 288 foreign national and 12 U.S. employees. Provided exemplary service to high-ranking U.S. and Japanese military and DoD Personnel. Ensured compliance with policies and procedures of the Status of Forces Agreement between the U.S. and Japan, and policy guidelines issues by USFJ.

SFUZZI RESTAURANTS, INC., Dallas, TX 1993 – 1997

Directed overall performance and P&L success of multiple upscale restaurants throughout California and Las Vegas. Full accountability for financial planning and management, P&L, budgeting, sales planning, and forecasting. Developed regional marketing and advertising strategies; monitored effectiveness of programs.

Generated $2.2M to $5.5M per site annually, with up to 150 employees per facility, and 18 managers.
