OVERVIEW

My first cooking job was at the Statler Hotel School at Cornell University in Ithaca NY.

I have since run two restaurant kitchens, and been AM chef at the Hilton Garden Inn in Ithaca. I then moved to Ithaca College where I was lead chef. I have worked side by side with many culinary arts graduates with amazing skills over the years, and have been able to match skills, and frequently impress most of them. Our kitchen did an average of 3600 meals per day, as well as all the catering events at the college, and they were daily.

Areas of Expertise

I work well with others and am not afraid to take on leadership roles.

I can prepare most ethnic foods, and have knowledge of food allergies, as well as vegetarian and vegan foods. I have a large understanding of spices and ingredients.

I excel in Mexican, Italian, and Asian foods, I also know a lot about smoking meats.

Can copy, create, or invent many sauces if needed

Worked with training, and teaching student kitchen help.

High end catering experience up to 1000 people.

Able to lead and hopefully inspire workers to do their best by example, I won’t ask anyone to do what I would not do. I can drop down and do dishes if it’s needed and we are short a dishwasher.

Not afraid of long hours or weekends (actually prefer weekends due to traffic).

Professional Experience

Hofbrau At the Rim, San Antonio, 210-***-**** 2013-present

Head chef in charge of daily specials, all deserts, all soups, smoking and processing meats, special or unusual sauces. Dealing with the SYSCO order, sometimes placing it, always checking it in to be sure everything is there. Opened the restaurant and clocked in employees for the kitchen, logged in all deliveries, (i.e. beer, liquor, linens etc.) until a general manager arrived.

Sodexo, Lead chef at Ithaca College Dining Services. 2005-2013

In charge of daily operations and staff as well as student help.

Took care of catering for Ithaca College, special events, and helped other colleges such as Le Moyne, Colgate, and Hobart with large events. Had a Serve safe certificate for 6 years but it is no longer valid, got the highest score in class last time 98.

I helped plan menus, make adjustments for volume, assure quality, and minimize waste.

Helped plan special dinners for the students such as, Tour of Germany, Tour of Italy, Tour of Mexico, Taste of the World Etc.

Hilton Garden Inn, AM lead chef 2004-2005

Prepared and served breakfast as well as coming up with specials.

Prepare and execute banquet events for AM.

Break down from breakfast and set up for lunch in the restaurant side.

Log in and receive food products.
