Do monthly staff schedule

Handling & oversee the production of cafeteria kitchen

Menu Planning and Development, from Hotel Promo, special buffet, functions, and monthly theme buffet.

Do menu engineering for recipe costing of menu from buffet, set menu, additional in ala carte and special events

Make production report in daily breakfast buffet, weekly lunch and dinner buffet

Monitor and check inventory stocks of ala carte items, stocks on hand on walk in freezer from meat to seafood, stocks on hand in walk in chiller of all fruits, vegetable, bread & dairy items.

Ordering of all kitchen supplies.

Approving all request of orders & salary of staffs.

In charge for interviewing all applicants who applied in kitchen

Attend weekly meeting.

If fully booked & high occupancy I also cook for breakfast for refill in buffet & weekly lunch & dinner buffet.

I make it sure before serving of ala carte orders I check the quality, taste, plating of all orders. Before serving to guest.

Check & maintain the proper grooming of all staff.

Check every day the standard temperature of walk in chiller and freezer and all stand chiller and chest freezer.
