WORK EXPERIENCE:
August 2016- November 2016 Shale Oak Winery, Paso Robles, California
Assistant Winemaker; processed grapes into wine: cleaned and sanitized equipment; sorted grapes; transferred wine; tasted juices to determine if more time or additions needed; monitored progress, pH and TA; topped barrels to reduce oxidation;added potassium and water to certain ferments; added sulfur to barrels to prevent spoilage; used punch downs and pump overs; performed delostage; burned sulfur sticks to preserve barrels; monitored fermentation temperature; solved high brix issues (adding water to ferment) and barrel leaks (hammering wood into holes)
June 2016 – July 2016 Enology Study Abroad Internship, Puglia, Italy
Worked with Italian winemaker to create a wine blend and wine bottle label; compared marketing approaches of top wineries in the Puglia region
