As the Assistant Food Service Administrator, I am also responsible for handling inmate complaints, coordinating with vendors concerning delivery of food stock, enforcing policies both local and National. I spend approximately 85% of my time working on managing the Food Service budget, updating the Federal Nutrition System, coordinating with the vendors for deliveries, responding to complaints of inmates and staff and 15% on making rounds at the Food Service departments around the Complex conducting sanitation inspections and monitoring the departments to ensure they are adhering to all policies. Responsible for the production and presentation of meals served to approximately 1800 inmates within a correctional setting. Through my inmate work detail of between 40-80 inmate work crew, I am responsible for preparing meal three times a day following a standard recipe and recipe conversions. I enforce strict sanitation guidelines while maintaining proper food handling procedures, this is done in accordance with National, Federal and Local Policies. I supervised and train inmates, completed daily out counts, logs, reports, time sheets, maintained an open line of communication with other departments to help facilitate maintenance or purchase of broken equipment, I respond to emergencies and participate in crisis management needs for the Institution. Upon my arrival at FMC Carswell, I was challenged with a whole new outlook on food preparation. While there I gained a wealth of knowledge in preparing medical diets this is to include diets for renal patience, cancer, patients, terminally ill patients gastrointestinal patients, while continuing to provide meals for general population female inmates, with the assistance of a register dietician. Most meals were transported to the designated floors via satellite feeding process. Utilizing the Technical Reference Manual, TRM 019.01, we were able to sucessfully provide adequate and nutritional diets in keeping with the prescribed diets. In addition to providing medical diets, I also prepared main line fare for approximately 1200 inmates housed at the Medical Center and approxaimately 160 inmates housed at the Camp. Some additional duties included transporting stores to the mobile camp food service, responding to emergencies, providing custody department with Relief Officers once a week, ordering food for each facility, communicating / purchasing food through vendor's, escorting, shakedown's, transporting inmates to local hospital's for treatment, conducting monthly safety talks, counseling inmates on work performance, assign inmate tasks daily. One of my greatest accomplishments was to train inmates in Food Production Apprenticeship classes two days a week this class was for college credits through the local University.

Cook Supervisor

Responsible for preparing 1200 meals three times a day to the inmate population. This was accomplished through a work detail of approximate 40 inmates. I supervised, trained and conducted follow up techniques to accomplish cooking, baking, dining room operations tasks assigned to me.
