I am a seasoned professional with over 12 years of catering and management

experience.

Experience

Present: Sodexo Government Services Division

My position is Catering Manager at Vandenburg AFB, California

2012: Sodexo Campus Division

My position was Catering Manager lll at Xavier University New Orleans LA.

My responsibility include driving sales, cold calling, cost control, menu

planning, presentation, pricing, billing, resolving customer complaints,

training, labor management hiring and scheduling catering staff. Direct

setups and work closely with clients and customers to arrange and follow

through on all catering events on and off campus to ensure all special

requests are met. I give personal attention to the University President and

staff to ensure all their needs are met. Work throughout the unit as needed

during slow time in catering.

1999-2010: Savory Affair Catering

(Owner/operator)

I built my own commercial kitchen and became the owner and operator of

Savory Affair Catering in 1999. Having worked with hospitals, schools,

country clubs, conference centers and corporations in event planning, cost

analysis, and budgeting allowed me to develop a variety of skills necessary

to operate a profitable business. I have proven abilities in meal planning

and preparation, expense control, staffing, training, and quality kitchen

management.

1980-2009: Vanderslice Home Reconstruction/Remodeling

(co-owner)

Responsible for purchasing home building materials and equipment. Managed

budgets for construction business. Construction work consisted of

installing windows/doors, repairing/removing flooring, moving/adding

interior walls, installing kitchen cabinets and other home improvement

projects.

Accomplishments:

I supervised a staff of 15 full time employees and as many as 30 part time

employees.. As executive chef I gained experience in food preparation,

presentation, training workers, scheduling events/dinners, preparing

deposits, receiving deliveries, verifying invoices, communicating

effectively with clients, customer service, and maintaining a safe work

environment where employees are team players.

Became a vendor for Tyson Foods Corp. in 2000 remained their vendor for

business meetings, trainings, and special events for 8 yrs. Became a vendor

for colleges, Board of Education, county and state events. Experience in

contract management service working in cafeteria environments and training

employees for positions as needed.

While managing my catering business, I also ran a small restaurant with a

staff of six full-time employees. I operated and managed events at the

local Country Club for three years. My responsibilities were to serve

quality foods, manage the kitchen, the bar, and staff, setup and decorate

for events, and hire quality workers. I am self-motivated and able to

juggle multi-faceted tasks energetically and capably.
