Thesis Project title: Chocolate as a health food: An exploration of the antioxidant and antihypertensive effects of

chocolate

Brief account: Research of the potential health benefits of dark chocolate was done, explaining the biochemistry

of antioxidants and why dark chocolate affects blood pressure. Consumption study on the effects of dark

chocolate consumption on blood pressure in healthy adults was carried out. HPLC analysis of antioxidants using

reversed phase chromatography.

Course modules: Medical, food, environmental and industrial microbiology. Scientific Analysis (UV,AA +

florescence Spectroscopy labs), Bioanalytical techniques(various chromatography technique labs, CE),

Statistics, Protein Biochemistry (SDS PAGE labs), DNA cloning technology + DNA fingerprinting (isolation,

AGE, profiling, labeling, sequencing, PCR, hybridization labs), Nutritional biology, Immunodiagnostics

(ELISA labs, blotting), Pharmacology, Molecular diagnostics Validation. Physics, Math, Scientific Computing.
