. Assess, treat, educate and write plans of nutritional care therapy
for a rural health Critical Access and Skilled Nursing Facility on
all residents and patients.
. Responsible for overseeing the interim Dietary Manager and all staff
of the Dietary Department.
. Serve as preceptor for the Dietetic Service Supervisor program

. Assess, treat, educate and write plans of nutritional care therapy
for a Skilled Nursing Facility on all residents.
. Manage Dietary Department including the opening of the kitchen,
hiring staff, scheduling, setting up task lists, cleaning schedules,
budgeting and ordering, in service of facility staff, food handling,
and labor hours.
. Coordinated and lead interdisciplinary resident weight meetings
designing appropriate nutritional interventions and strategies for

. Assess, treat, educate and write nutritional therapy plans for
neonatal through geriatrics of a 200 bed facility, including
coverage at Summerlin Hospital Medical Center's pediatric unit.
. Solely responsible for the education, calculation of estimated
nutritional needs, actual intake, cultural preferences, dietary
restrictions and drug-nutrient education of patients on all units
including ICU, IMC, Medical Surgical, Surgical and Rehabilitation.
. Responsible for nutritional assessments and writing plans of care in
a Neonatal Intensive Care Unit. Counseling for at-risk mothers on
nutrition for breastfeeding, gestational diabetes, hyper emesis, and
prenatal nutrition. Specialized training in the level III NICU

Center.

. Worked as a renal dietitian ascertaining diet history (examining
patient's normal pattern of food intake), reviewing blood results to
determine if change in diet was necessary, and then building an
appropriate diet. Looking for changes which may indicate the need
for dialysis and supplemental beverages or food.

. Community Rotation (August 2004-October 2004): Center's for Disease
Prevention & Health Promotion. Worked with the Healthy Path's
research project educating Navajo Elders regarding healthy nutrition
and physical activity within the Navajo Nation.
. Clinical Rotation (November 2004-January 2005): Heart Hospital of
New Mexico. Instructed patients and their families and/or caretakers
on heart-healthy nutrition. Instruction included: reducing sodium
and coordinating nutritional intervention for patients.
. Food Service Rotation (January 2005-April 2005): La Vida Llena
Retirement Center. Worked with a culturally diverse group of people
utilizing and improving my management and food operation skills.
. Enrichment Rotation (April 2005-May 2005): ARCA. Assessed

Prader Willi's Syndrome. Responsibilities included: instructing
staff to provide nutritional meals to the residents. Developed a
dysphasia clinic handout.

. International research training in Jos, Nigeria. Program: Nutrition
in Fulani Village Children (ages 0 - 12). Purpose: Cooperative
program to provide undergraduate students an opportunity to work
with Nigerian patients and villagers.

anthropometric and dietary consumption of the Fulani village
