Director of Food and Beverage
Directs all strategic planning initiatives and hold P&L responsibility for the food and beverage department of this 14 million dollar high adventure resort. Manages 10 direct reports and 100 indirect reports in operations throughout 4 separate dining concepts, and 2 outlets including on and off premise catering. Executive committee member responsible for evolving brand strategies, developing revenue generating concepts and financial performance.
Devised a brand evolution initiative, refreshed the restaurant design, introduced more consistent visual and brand language within marketing, re-engineering the business model, and led the strategic revitalization and rollout of the restaurant brand achieving a 13% increase in profits.
Slashed total departmental operating costs 11% by instituting stringent inventory controls and more cost effective purchasing, operational and general administrative procedures, while redefining quality standards.
Spearheaded a disciplined development strategy to introduce 450k of new business to the department with the potential of another 2 million dollars of increased revenue over the next 5 years. Dramatically improved profitability with 75% flow through to the bottom line. Increased PACE from 14% to 27% in two seasons.
