Hawaii Community College: August, 2006 Present - Lecturer - Hospitality and

Tourism Program Hybrid and Distance Learning. I Teach the Hotel Management

Courses: Introduction to Hospitality Management, Principles of Hospitality Management,

Management 20, Guest Services, Front Office Procedures, Housekeeping Procedures,

Hospitality Marketing, and Hospitality Law.

Hawaii County Economic Opportunity Council May, 2006 October, 2008 -

Food Service Manager

Overseeing all food production of an average of 2,000 meals per day, island wide.

There were kitchens in Hilo and Captain Cook. There were on site manager at each

site with a total staff of 22. We provided the meals for The Hawaii County Meals on

Wheels Program, Head Start Schools, Charter Schools, Day Care Centers and Senior

Adult facilities. Developed all menus based on the nutritional standards of the

Federals and State Food Service Programs. I was responsible for preparing the

contracts for the schools and the state. My office did the contracting with the food

suppliers. Maintained the portion and food cost controls. Hired, trained and had

overall supervision of all the staff.

Hotels west of the Mississippi, extending to Hawaii. Developed and maintained the

relationship between the franchisees and the company. Trained the franchisees in

operating and marketing and over saw the Regional Operators Council.

Director of Property Management, GM Development Inc. Responsible for three

Condo resorts, one apartment building, 57 rental houses and three Homeowners

Associations. Hired and supervised all management staff, housekeeping and

maintenance personnel. Responsible for the budgeting, marketing, staff and

member relations. I ran the homeowners meetings with the board members.

I was responsible for all preventative maintenance projects.

Gold Canon Resort - Managed a full-service Resort with an 18-hole golf course.

Hilton Hotels Corporation, I was the youngest sales manager in the company at that

time. I worked at the Plaza Hotel, Waldorf Astoria Hotel, Denver Hilton Hotel and

the Palmer House.
