Initially employed to perform customer service and marketing functions for
a company importing high quality Norwegian cod-liver oil. Performed
marketing writing and editing, cold calling, and worked public marketing
venues. Asked if one could cook with cod-liver oil, I began exploring the
idea at the urging of the company owners. Within a year I found a way to
include significant amounts of cod-liver oil in a cookie that tastes
fantastic. The patented process is the foundation of OmegaCookies; "the
world's healthiest cookie". As Executive Chef I am responsible for
sourcing and ordering the highest quality ingredients; preparing doughs to
near-pharmaceutical standards, developing flavors, and the beginnings of
production baking.

Upon returning to the U.S. from Kwajalein Atoll, I relocated to the Gulf
Coast of Florida and changed the name of my business from The Portable
Gourmet to The Kilted Cook. I plan, shop, prepare and serve multiple meals
or private dinner parties to clients in their homes. My clients are
upscale full-time and snowbird residents of local Key island communities
and the cities of Sarasota, Bradenton and Venice.
Technical Writer III, KRS Inc., Kwajalein Atoll, Republic of the Marshall
Islands, 2005-2007
Wrote and edited classified operations, maintenance and other technical
manuals and documentation for hi-tech radar and other sensors at the U.S.
Army's Reagan Missile Test Site. Also wrote and edited periodic reports
and marketing collaterals as required.

Colorado & Kwajalein Atoll; 2002- 2007.
Perform food preference analyses, nutritional planning, and menu creation
for individuals, families and groups. Shop for the best ingredients at
the best price. Prepare and cook delicious, nutritious multiple dinners at
one time, in the homes of upscale clients. Plan, shop, prepare and serve
private dinner parties and other in-home catering for 2 to 200 people in
private residences as well as public venues. Prepare and serve meals to
met specific medical dietary requirements for shut-in, surgery recovery,
and long-term medical condition clients. Teach cooking classes. The

Designed and wrote owner/operator manuals for concrete cutting saws and
hydraulic power units; also designed and wrote brochures, flyers,
