Contracted consultant position of five months to study, develop and
implement modern day restaurant business strategies to four, 21 year
old concepts, I was offered the permanent position in the lead dining
operations management roll. All aspects of this 4 outlet restaurant
operation I retooled and directed these concepts to a staggering growth
of one million dollars per year. Co-designed and developed a thirteen
million dollar renovation of all concepts. After this retooling and redesign
of these concepts, the operations have been rated best in guest
satisfaction for the past two years in the EPCOT resort. Currently I have
taken on new challenges in developing labor control, product acquisition
to further culinary efforts in ever changing world of food.

After taking over as executive General manger for the three unit Wild
Jack’s concept, promoted to Director of Operations within six months. The
position entailed re-establishing consistency in service, quality food and
controls to bring this concept back to profitability. Developed and directed
all training and development programs, proformas, budgets, lease
negotiations, food purchasing programs and legal aspects of this
company.
Due to my success in the food purchasing negotiations and
consistent positive cost of sales with Wild Jacks, I was asked to join
the team at Planet Hollywood Intl. as Director of Purchasing
worldwide. While still overseeing the Wild Jack’s concept, I was
responsible for all national and international food contracts and
negotiating contracts to enhance purchasing power and improve
cost of sales and consistency in food and beverage in all corporate
and franchise units. Directly responsible for $31 million in contracted
food and beverage purchasing per year. Maintained the needed
relationships with vendors and distributors to maintain the highest
quality of product and distributor service to each unit.
