responsible for the maintenance of the Menu, Recipe,

and Ingredient data base / operating systems for the

above Marine Corps Bases. This includes Menu

Purchasing Specialist

In this position I am directly responsible for the food

and beverage purchases for the Marine Corp recruit mess

hall in San Diego, with purchases of around 8.5 million

dollars a year. I also monitor and direct food

purchases, as well as provided assistance and

consultation services for 6 other Mess Halls located at

MCRD SD, MCAS Miramar and Yuma.

2004 - 2005 Sodexho (Government Services Division)

Food Management and Information Systems Clerk

My primary responsibilities are Purchasing and Ordering

(including Inventory, maintaining product rotation,

Recipe and Ingredient Analysis, Food Cost Control, Menu

Analysis, Production and Menu Planning, Haccp, Contract

Compliance, and supervision of all storeroom and

warehousing staff). In this position I maintain a

perpetual inventory of around 150,000 dollars, made

yearly purchases totaling more then 8 million dollars,

maintained and controlled inventory levels and food

costs in a constantly changing environment serving

anywhere between 10,000 to 18,000 meals per day.

While in this position I have reduced the perpetual

inventory levels by over 100,000 dollars.

Through aggressive menu planning, cost analysis, and

product cost awareness I have reduced food purchases by

over 650,000 dollars from the previous year, without

increasing labor costs, while serving approximately

250,000 more meals.

Reduced our average plate and food cost by over 20

percent from the previous year. For a total cost

savings of 1,220,400 dollars from the previous year.

2002 - 2004 The Arc of San Diego

Marine Corp Recruit Depot, San Diego, Ca

Mess Hall Manager

While in this position I was responsible for all

aspects of the daily operations of the recruit mess

hall. Including HACCP, Safety, Quality Assurance,

Hiring, Training, Scheduling and Payroll, as well as

the day-to-day operations. This is a huge operation

with about 300 employees serving 12,000 to 18,000 meals

per day.

While in this position I was responsible for

streamlining the payroll process, which not only

increased accurate reporting but also significantly

speeded up the process.

Many of my ideas, procedures and policies that I had

put into place are still used by the Arc of San Diego

today.

2001 - 2002 La Salsa San Diego, Ca

General Manager

In this position I was responsible for all aspects of

the restaurant operations. P&L, Training, Scheduling,

Food and Labor Cost Controls, Quality Assurance, Guest

Service, Safety, and Hiring.

While in this position I was extremely successful at

controlling both labor and food cost, consistently

exceeding my budgetary goals.

I increased customer counts over the previous year in

two of La Salsas Restaurants through increased guest

interaction, service, and satisfaction.

Created and implemented breakfast service, thus

increasing revenue without any increases in labor.

Subsequently La Salsa has since added breakfast service

to many of its locations.
