Supervised $11 million budget and 12 managers of varied properties.
Full responsibility for the largest single F&B property in our
portfolio. Full Service Dining, Catering, Fast Casual outlets.

Implemented 4 new themed menus with an average 14% resulting increase
in sales
Complete planning an operation responsibilities for the BCS National
Championship for 15,000 fans

Oversaw $1.5 million revenue, 75+ employees, 14 meeting/event sites, 4
full to limited service venues (luxury Cigar Bar, Sports Bar, 24 Hour
Caf , Fine Dining Room and Room Service. Managed all aspects of daily
operations, purchasing and COGS, equipment purchasing, rental and
maintenance, office and union service staff supervision. Handled
budgets including monthly, quarterly and yearly trends and analysis.

Supervised daily operations for all facets of a privately held golf
course with Banquet, Meeting rooms and Golf Outing - Public restaurant
on site, satellite grille and stationed beverage locations. Full
responsibility for property in General Manager absence. Sales growth
from $235,000 year one to $585,000 by end of 1998.
