Food and Beverage Manager

Hired on as F & B manager with Local Hotel, control of all food outlets,

including banquets, bar and dinning room operations. During my short tenure

food cost was lowered by eleven points, and liquor costs were lowered by

twelve points over previous periods. Good knowledge of BEO's, handled

banquet operations up to 400 quests, both plated and buffet style with

emphasis on time, temperature and presentation. Worked without support of

Chef/ KM during employment, because of financial restraints.

1983 -1999

Operations Manager

Started J. Parrinos restaurant, a casual Italian Pasta House with an

emphasis on great service, quality food served in clean and family friendly

setting, full responsibility for operations, advertising, cost control,

recruiting, training, vendor relations and general record and report

keeping requirements associated with the restaurant industry.

1991-1999 / 2001-2010

District Manager

Opened the first of Pasta Express, quick serve Italian restaurants with the

emphasis on quick service, quality food, packaged for the take home market.

Coached, trained GM and AGM in day-to-day operations of the store, coached

customer service guide lines that resulted in higher customer satisfaction

scores. Responsible for planning, goal setting; focused on in-store problem

solving and process improvement; motivates Restaurant Managers, Assistant

Managers and staff members. Overall drove excellence of all company owned

restaurants, grew locations to three company stores and five franchised

units.

1999-2001

Recruiter / Consultant

Opened Alliance Restaurant Management, a full service recruiting service in

the hospitality industry. Candidates were searched out, interviewed and

presented to prospective clients, for the propose of filling vacancies

across the country.

2006-2010

Operation Manager

Opened Tuscan Grill, full service restaurant serving proprietary recipes,

with full liquor license. Worked with architectural firm in planning

layout, served as construction manager.
