Research Assistant Investigation: Analysis of Acrylamide, content in
Puertorican friteries.
For some time Acrylamide has been suspected as a possible carcinogen
and it is also known to be a neurotoxin. After Swedish researchers detected
Acrylamide in commonly consumened foods, much concern has developed around
the issue, and other countries have conducted similar studies. Currently no
information is available about the presence or quantity of Acrylamide in
puertorican friteries. We plan to determine the presence and amount of
Acrylamide in Puertorican friteries. Through this project we will optimize
Acrylamide extraction from food matrix. Acrylamide quantification will be
conducted through the analysis of 2,3-dibromopropionamide, a brominated
derivative of the substance. The analysis will be conducted using gas
chromatography-mass spectrometry (GC-MS). The research will involve the
analysis of Acrylamide in already cooked Puerto Rican friteries bought from
various kiosks around the Island. For this analysis, mean values of
Acrylamide content for each type of fritery and geographic region will be
determined. Also statistical analysis will be conducted using regression
(R2) for each type of Puertorican fritery and geographic region that will
be analyzed. Significance will be determined using Analysis of covariance
(ANCOVA) for each type of Puertorican fritery and geographic region that
will be analyzed.
