SALARY $82,000 + superannuation

Great Mimosa Valley Pty Ltd is a well-established hospitality business renowned for its high-quality Asian-inspired dining experiences. Our kitchen focuses on authentic wok-style dishes, prepared with fresh ingredients and bold flavours, ensuring an exceptional culinary experience for every guest.

Key Duties and Responsibilities

• Menu Planning and Costing

o Plan, design, and update wok and stir-fry sections of the menu in collaboration with the Head Chef and management team.

o Estimate food and labour costs and assist in budgeting and stock control.

o Order, receive, and maintain adequate supplies of fresh and dry ingredients specific to wok-style cuisine.

• Food Preparation and Cooking

o Prepare and cook high-quality wok dishes using authentic Asian techniques.

o Ensure consistency in taste, presentation, and portioning across all dishes.

o Operate and maintain wok burners and related kitchen equipment safely and efficiently.

• Quality Control

o Monitor the quality of dishes at all stages of preparation, cooking, and presentation.

o Conduct regular tasting sessions to maintain standardised flavours and textures.

o Ensure that dishes meet Great Mimosa Valley’s quality and visual presentation standards.

• Teamwork and Communication

o Liaise with kitchen and service staff to ensure smooth coordination of food orders.

o Discuss menu updates, dietary requirements, and special event needs with management and relevant staff.

o Demonstrate and explain wok-cooking techniques to junior chefs and kitchen staff.

• Training and Supervision

o Provide on-the-job training and mentoring to kitchen staff, particularly in wok preparation and high-heat cooking techniques.

o Assist in staff selection and performance evaluation when required.

• Hygiene and Safety

o Enforce and comply with food safety, hygiene, and occupational health standards.

o Maintain cleanliness and organisation in the wok section and overall kitchen area.

o Follow proper procedures for the freezing and preservation of ingredients to minimise waste.

Skills and Qualifications

• Certificate III or IV in Commercial Cookery (or equivalent qualification).

• Minimum of 2–3 years’ experience in a busy Asian or wok-style kitchen.

• Strong understanding of wok cooking techniques and Asian flavour profiles.

• Ability to work efficiently under pressure in a fast-paced environment.

• Excellent communication, teamwork, and time management skills.
