Job Summary:
We are seeking a hands-on, detail-oriented Production Manager to lead and oversee all operations within our commercial kitchen. The ideal candidate will have extensive experience in perishable food production and a deep understanding of food safety regulations, including HAACP and the Food Safety Modernization Act (FSMA). This role requires strong leadership, organizational, and communication skills to manage kitchen staff, maintain production efficiency, and ensure compliance with all safety and sanitation protocols.
Key Responsibilities:
Oversee daily production of deli salads and other prepared food items according to established recipes and quality standards.
Supervise and lead a team of kitchen staff, ensuring productivity, training, and adherence to company policies.
Develop and maintain production schedules, ensuring timely and accurate order fulfillment.
Enforce strict compliance with HAACP plans, FSMA requirements, and all food safety and sanitation standards.
Work closely with QA/QC teams to ensure consistency, traceability, and product quality.
Monitor inventory levels of raw materials and supplies; coordinate with procurement and receiving departments.
Identify opportunities for process improvements, cost savings, and operational efficiency.
Ensure proper use and maintenance of kitchen equipment and machinery.
Participate in internal and external audits, and maintain documentation required for regulatory compliance.
Maintain a clean, organized, and safe working environment in accordance with company and regulatory standards.
Qualifications:
Minimum 5 years of experience in a supervisory role within a perishable food production environment.
In-depth knowledge of HAACP principles, FSMA regulations, and other food safety programs.
Strong leadership skills with experience managing a team in a high-volume kitchen or production facility.
Excellent organizational and problem-solving skills.
Ability to work in a fast-paced environment and manage multiple priorities.
Comfortable working with production software, batch records, and inventory systems.
HAACP and PCQI Certifications preferred.
Working Conditions:

Standing for long periods; ability to lift 50+ lbs
Exposure to hot and cold temperatures
Schedule requires early mornings or occasional weekends, depending on production needs
