YOUR ROLE

Aramark Food Services is currently recruiting for a Chef Supervisor to join our team at HMP Birmingham. The successful candidate must have a good level of supervision as they will be working with both Civilian and prisoner catering staff. The role owner will be responsible for organising and controlling Prisoner Labour in the production of food, and ensure food is prepared and presented in accordance with Component and Client standards.

** Please note this is a post in a custodial setting and that successful applicants will have to complete required HMPPS vetting.

RESPONSIBILITIES

Produce within the Component standards food required for the day’s menu.

Controls the work of the kitchen work party ensuring that all foods are handled from delivery to service correctly.

Ensures that the various codes of practice regarding hygiene are fully implemented throughout the department.

Maintains, controls and updates all appropriate records on the receipt, storage and issue of food items and, maintains secure systems for those.

Organises and provides hospitality, catering and other functional services required throughout the prison.

Ensures that all requests for the maintenance of plant and equipment are processed efficiently.

Ensures compliance with all ARAMARK and departmental policies relating to:

Health & Safety at Work Act

Grievance & Disciplinary Procedures

Business Conduct Policy

Food Safety Act

Food Hygiene Regulations 1991 as amended

Control of Substances Hazardous to Health Regulations 1992

The Food Safety (General Food Hygiene) Regulations 1995

PSI 44/2010

Hazard Analysis & Critical Control Points (HACCP )

REQUIREMENTS

NVQ Level 2 Culinary or equivalentFood hygiene certificate – Level 2

Baking experience (an advantage)

Previous experience in a Food Production role within catering or retail

Good level of spoken English

Clean Driving Licence & Own Transport is Essential

Understand basic catering finances – Costing, Production, Yields, Wastage etc.

Input collated information into Food Production Management System

Ability to maintain a variety of operating and general records and to prepare reports

Good communicator with the ability to prioritise tasks
