Job Summary
Responsible for preparing and executing banquet food production for meetings, events, and special functions in a high-volume casino resort environment. Works collaboratively with the culinary team to ensure quality, consistency, and timely service while upholding Spokane Tribe Resort & Casino standards for guest satisfaction, safety, and presentation.
Key Responsibilities
Prepare, cook, and present banquet menu items according to standardized recipes and event orders.
Assist in the setup, execution, and breakdown of banquet events.
Maintain proper food handling, storage, and rotation practices to ensure freshness and compliance with health codes.
Work with Banquet Chef/Sous Chef to ensure all food items meet portion, quality, and plating standards.
Monitor production timelines to meet banquet service schedules.
Assist with inventory, requisitions, and product organization for banquet functions.
Maintain a clean, organized, and safe work area in compliance with sanitation and safety standards.
Collaborate with banquet servers and other team members to ensure smooth execution of events.
Perform other duties as assigned to support kitchen and property operations.
Skills & Qualifications
Previous line cook or banquet cook experience in a high-volume kitchen.
Knowledge of culinary techniques, banquet preparation, and large-batch cooking methods.
Ability to follow recipes, portion guidelines, and plating standards consistently.
Strong time management and organizational skills; able to work under pressure with multiple priorities.
Team-oriented with strong communication skills and a positive, professional attitude.
Food Handler Certification
Physical & Work Environment Requirements
Ability to stand and work on feet for extended periods.
Frequent bending, lifting, carrying, and moving items up to 50 lbs.
Work in hot, humid, fast-paced kitchen and event environments.
Variable schedule including nights, weekends, and holidays based on event needs.
