The Sommelier is responsible for performing beverage service while assisting the rest of the service and management team in the dining room. This includes leading the service team in beverage recommendations, sales and execution of proper wine and beverage service. The sommelier will also participate in wine and agave list maintenance, beverage inventory, beverage receiving/stocking, maintaining the proper wine and agave inventory levels, and staff training. Key Responsibilities:
Daily Operations
Greet guests in a positive, friendly manner with eye contact and intention
Communicates the needs of guests to co-workers, kitchen, and management
Actively participate and contribute to pre-shift meetings including communicating new products, and training on wine/spirits
Has complete knowledge of all food menu items, specifications, and allergies
Displays a mastery in understanding and exceptional communication of the wine list, agave list, and cocktail offerings
Forms, grows, and maintains relationships with guests for repeat business
Consistently follow sequence of service utilizing all proper procedures standardized by the room management
Participate in a regular inventory for all beverages and supplies
Update inventory locations and bin labels whenever wines are moved
Eliminate waste by monitoring employees on pour levels and proper storage
Set-up and train employees on wine, agave, beverage service, and knowledge
Periodically lead and host wine and agave related classes
Enforce proper beverage service standards of all employees during service
Maintain clean, error-free beverage lists by constantly updating and reprinting
Check-in warehouse and direct beverage orders.
Input all invoices from warehouse and direct beverage orders on the day the wine is received
Compare warehouse invoices against the previous night’s sales to ensure all proper beverage was ordered and correct any errors
Return/exchange any beverage where a warehouse or direct beverage order error has occurred
Stock wine prior to and after service
Prepare and stock agave cart prior to and after service
Set-up and break-down all by-the-glass and wine pairing areas
Prior to service, organize all event wines that are expected to be served during the service period
Assist with placing beverage orders at the end of service or by a specified time during service
Work closely with the Beverage Manager to ensure the organization and maintenance of wine service spaces
Assist with programming and format bin numbers and wine information into the POS systems accurately
Required to attend regular group meetings
Assists with moving chairs and tables as needed based on the floor plan
Responsible for performing table maintenance by checking on the guest throughout service
Completing opening and closing side work
Maintaining health code standards
Maintain table cleanliness utilizing a silent service approach
Bid farewell to guests, using guest’s name when known, and encourage them to return
Maintain a level of professionalism
Anticipate the guests’ needs and respond appropriately with a sense of urgency
Work as a team, assisting all guests’ and employees’ needs and inquiries.
Perform all other job-related duties as requested
Be familiar with all Hotel services/ features and local attractions/ activities to respond to guest inquiries accurately
Maintain working knowledge of designated glassware and garnishes for each drink
Complete opening, closing, and ongoing side duties, not limited to fold/stack napkins, polish glassware, stock glassware, restock supply cabinets and service stations, clean and inspect cleanliness and condition of assigned station and service areas; rectify any deficiencies
Guest Services:
Ensure guest has same elevated experience in lounge as in dining room
Adapt to different guests as lounge will be for guests dining as well as those coming to enjoy the atmosphere for cocktails
Company and Department Responsibilities:
Work varied shifts, including weekends and holidays
Requires the ability to work efficiently and within a team environment
Must be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all times
Experience in Bottle service preferred, but not required
Consistently deliver exceptional service to every guest while interacting and entertaining in a professional manner
Maintain a clean and hygienic workstation in accordance with Clark County Health Standards
Ability to initiate and maintain an upbeat and relaxed environment on a consistent basis
Adhere to and enforce company specific safety policies
Maintain dialogue with all guests while upholding a warm, positive and friendly persona at all times
Qualifications
Requires a minimum of 2 years’ previous work experience as a Sommelier in a lounge/ fine-dining restaurant
Court of Master Sommeliers Level 1 certification required
Candidates must exhibit wine, beverage and advanced service knowledge including wine service, champagne, mixed cocktails, cordials, after dinner drinks, upselling, and tableside service with a focus on agave spirits and list curation
Must have a high school diploma or GED
Must be fluent in English, and the ability to speak Spanish is preferred
Must be proficient in POS software
