Executive Chef Job Description
We are looking for an individual proficient in all aspects of culinary execution. The ideal candidate will be creative in food presentation, proficient in executing in a high-volume cafe. This is a hands-on position that will require in-house presence min 40-45 hours per week. This will primarily be a daytime position unless there are shortages on the line or scheduling emergencies.
The Executive Chef will be primarily responsible for:
Maintaining kitchen cleanliness and proper sanitation of all surfaces.
Establish a kitchen cleaning schedule including daily, weekly and deep cleaning tasks
Hold chefs accountable per their schedule to keeping the kitchen, walk-in and all areas clean
Keeping the kitchen and all chefs organized and on task
Working hand in hand with the Corporate Executive Chef and Director of Restaurant Operations to drive productivity, quality, and consistency at Pioneer
Hiring all kitchen staff
Training all kitchen staff
Develop a program of training that will be adhered to by all new employees at Pioneer
Work with Corporate Executive Chef to establish a path to leadership for key employees (i.e. a kitchen org chart)
Developing new menus for seasonal changes at Pioneer
Work with Director of Restaurant Ops, GM and COO to execute a training program and new menu project plan
Collaborating with the all FOH Managers to fully understand desires of regular guests and FOH service needs
Maintaining the kitchen and surrounding areas in conditions that meet Cuyahoga County health codes, including food safety certificates
Communicating with the Chef Manager to ensure all prep needs are communicated and executed properly.
Rotating and dating such for optimal usage
Supervise and lead kitchen staff
Responsible for scheduling
Holding staff accountable via PIP and Write Ups
Creating paths to success through training
Identifying training needs and executing with appropriate methods
Assisting and directing kitchen staff in meal preparation, creation, plating and delivery
Assign daily cleaning tasks post 2pm to turn over kitchen for evening service
Daily line checks
Helping staff adhere to the daily schedule
Ensure opening and closing checklists are up to date and followed
Place orders for following day (5pm for meat & fish; 6pm for all others)
Work Environment
Work is performed in a restaurant/event environment. This role requires frequent standing and walking during entire shift. Work environment is fast-paced and team member must be able to manage multiple priorities throughout a shift. Exposure to cold and heat may occur on regular basis throughout a shift (entering refrigeration equipment, multiple industrial/food service and exposure to cooking appliances).
