An established upscale Japanese restaurant is seeking an Executive Chef to lead their main hot kitchen.
Qualifications:
5+ years in a culinary leadership role, specifically in upscale Japanese or Asian fusion (hot food)
Strong operational background, including scheduling, ordering, and team development
Must be able to filet a salmon and demonstrate advanced fish butchery skills
Portfolio of culinary work required for consideration
Key Responsibilities:
Lead all aspects of the hot kitchen (25% of total volume)
Supervise a team of 7–10 cooks and hire a sous chef of choice
Manage BOH systems, food cost, inventory, and training
Collaborate with ownership on menu development and execution
Maintain high standards for food quality, safety, and presentation
Foster a positive, accountable, high-performing kitchen environment
