Purpose and Scope:
The Rotating Sous Chef plays a crucial role in the kitchen by providing versatile support across all property kitchens.
As a “floating” chef, they are responsible for filling in wherever necessary to ensure smooth kitchen operations. The Tournant Sous Chef either supports the other chefs or fills in in their absences, preparing and expedites food in a timely and efficient manner while ensuring quality, consistency, and customer satisfaction. This role is key in maintaining a safe and sanitary work environment.
Essential Functions:
Rotate among various kitchens, including Sottoterra, Fin & Feather, Banquets, and Clubhouse restaurants, ensuring consistency in service quality, adherence to recipes, and timely execution of meals (60%).
Step in to lead or support during peak service times, addressing any immediate operational challenges.
Collaborate with Sous Chefs and other kitchen leaders to optimize kitchen workflow and maintain culinary standards.
Assist with creating and maintaining staff schedules to ensure proper coverage across kitchens.
Contribute to menu development, including seasonal updates, specials, and ensuring alignment with culinary vision.
Participate in recruitment efforts, including interviewing and onboarding new team members.
Attend management meetings, represent kitchen staff, and contribute actionable insights for operational improvement.
Document and assist in resolving disciplinary actions and staff concerns in line with company policies.
Monitor inventory levels, ensuring timely and accurate food ordering to meet business demands.
Oversee proper storage practices, enforcing first-in, first-out (FIFO) methods to ensure product freshness and minimize waste.
Analyze food waste trends and implement corrective actions to enhance cost control and sustainability efforts.
Conduct regular food safety audits, including self-inspections and random spot checks on coolers, storage areas, and preparation lines.
Train and mentor staff on food safety protocols and best practices, ensuring compliance with local and industry standards.
Respond to and resolve immediate food safety concerns, documenting findings and corrective actions.
Actively mentor and develop culinary staff, providing hands-on training to improve technical skills and product knowledge.
Assist in cross-training staff to build versatility and resilience within the culinary team.
Promote teamwork and a positive kitchen culture through open communication and recognition of team achievements.
Maintain high standards for food preparation, presentation, and consistency across all culinary outlets.
Regularly taste and review menu items to ensure quality and guest satisfaction.
Identify and resolve quality issues proactively, communicating feedback to the team for continuous improvement.
Collaborate with Banquet Chefs and Event Coordinators to execute large-scale events, ensuring smooth operations and exceptional guest experiences.
Assist in customizing menus and preparing dishes for special events, accommodating guest preferences and dietary restrictions.
Oversee the proper use and maintenance of kitchen equipment, identifying and reporting issues promptly.
Ensure that all team members are trained on the correct use of kitchen tools and machinery.
Monitor food costs, labor costs, and operational expenses, implementing strategies to maximize profitability without compromising quality.
Assist in portion control practices and evaluate portion sizes to meet both financial and guest satisfaction objectives.
