In this dynamic role, you will lead the operations of FYR, our signature restaurant renowned for its live-fire cooking and inventive Midwestern cuisine. Showcasing an open kitchen concept and emphasizing the freshest seasonal, locally sourced ingredients, FYR delivers an engaging and authentic dining experience. In addition to FYR, you will also oversee the vibrant lobby bar and adjacent dining outlets, ensuring seamless service and exceptional guest experiences across all venues.
You will collaborate closely with the Director of Food & Beverage and the Executive Chef to refine and elevate the restaurant concept. Your leadership will be instrumental in shaping the restaurant’s identity, supporting marketing initiatives, and representing FYR through strategic public relations efforts. Together, you will work to position FYR as the premier culinary destination in the city.
The ideal candidate is a passionate and accomplished culinarian with a dynamic leadership presence and a proven ability to inspire and elevate a high-performing team. They will bring creativity, strategic thinking, and a deep understanding of both culinary excellence and operational efficiency to drive the restaurant’s continued success. A strong commitment to innovation, team development, and delivering exceptional guest experiences is essential.
A minimum of three (3) years of experience leading a professional kitchen in an upscale, high-volume restaurant is preferred. Expertise in live-fire cooking techniques is required, along with a keen eye for quality, consistency, and the artistry of modern American cuisine.

What will I be doing?
As Executive Chef of Restaurants, you would be responsible for directing and administering the planning, preparation, production and control of all culinary operations in the signature restaurant, rooftop restaurant and lobby bar in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:
Direct and oversee all culinary operations, to include, but not limited to, production of all hotel meals, food quality and presentation, compliance with all safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability
Create and implement new menus and individual menu items for outlets based on current food trends and regional tastes in partnership with Director of Food and Beverage
Interact with guests and clients to monitor and assess satisfaction trends, evaluate and address issues and make improvements accordingly
Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
Perform general management duties including, but not limited to, systems management, budget and forecasting, report generation, department management and meeting participation and facilitation
Monitor and develop team member performance to include, but not limited to, providing supervision and professional development, scheduling, conducting counseling and evaluations and delivering recognition and reward
