We are looking for a Executive Pastry Chef to join the re-opening of the famed Delano Miami Beach.
Set to open its doors in 2025, Delano Miami Beach will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. Comprising 170 rooms and distinct food and beverage concepts, the hotel will preserve its iconic walk-in pool and, in addition, unveil a new pool on an amenity deck, offering breathtaking views of the ocean. Delano Miami Beach will act as the brand’s flagship location, re-establishing Delano as a trailblazer in luxury lifestyle hospitality. Ennismore, in partnership with Cain International (the owners of Delano Miami Beach as well as partner in the Delano brand), are currently undertaking a significant renovation and redevelopment of the iconic Delano hotel with an aim to open its doors again ahead of the 2025 winter high season.Job Description
Under the guidance of the Executive Chef, the Executive Pastry Chef is responsible for overseeing all aspects of the pastry and bakery operations within our hotel. This includes leading a team of pastry professionals to deliver for all outlets including restaurants, room service, and special events. The role demands creativity, precision, and a commitment to excellence aligned with the Delano Miami Beach standards.
What you will do...
Manage production and presentation for all pastry items to ensure consistency, quality, and aesthetic excellence.
Lead, train, and mentor the pastry team to maintain high culinary standards
Collaborate with Executive Chef and F&B team to develop seasonal offers and special events menus.
Oversee daily operations of the pastry kitchen, including scheduling, inventory, food costing, and ordering of supplies.
Ensure compliance with hygiene, health, and safety regulations in accordance with Delano Miami Beach standards and local laws.
Control labor and food costs through effective planning and waste management.
Maintain strong relationships with suppliers and source premium ingredients.
Participate in culinary promotions, guest engagements, and media events when required.Qualifications
Minimum 5-7 years of experience in a luxury/lifestyle hotel, fine dining, with at least 3 years in a leadership role.
Proven expertise in classical and modern pastry techniques
strong leadership, team development, and organizational skills.
Excellent communication and time management abilities
Must be able to work in a fast- paced, customer service driven environment
Proven team leader with a high level of energy and motivation with a proven track record of living the company's values
An intermediate to proficient understanding of Computer systems such as: Opera, GoConcierge, HotSOS, Microsoft Word, Excel & Outlook is preferred
Enter and locate work related information using computers and/or point of sale systems
Ability to spend extended lengths of time viewing a computer screen
Possess a gracious, friendly, and fun demeanor
Ability to multitask, work in a fast-paced environment and have a high level attention to detail
Must be able to stand or walk a minimum eight-hour shift.
Must be able observant and quick to respond to various situations while also multitasking and handling stressful situations.
Must be able to twist, tow (push or pull), reach, bend climb and carry objects as necessary
