Responsibilities
Select, fillet, and fabricate various types of fish while adhering to industry standards.
Ensure the proper storage, handling, and portioning of fish and seafood items to maintain freshness and quality.
Collaborate with other kitchen staff to develop and implement fish-based menu items.
Monitor food preparation and serving to ensure adherence to safety and sanitation standards.
Maintain a clean and organized work area, including proper cleaning and sanitization of tools and equipment.
Train and mentor junior kitchen staff on fish fabrication techniques and best practices.
Assist with inventory management, ensuring all fish and seafood supplies are adequately stocked and rotated.
Requirements
Minimum of 3 years of experience in fish fabrication or a similar role
Extensive knowledge of various fish species, fabrication techniques, and cooking methods
Strong attention to detail and commitment to quality in food presentation
Ability to work in a fast-paced kitchen environment
Excellent communication and teamwork skills
Knowledge of food safety and sanitation regulations
Flexibility to work nights, weekends, and holidays as required
