Sheridan Fruit Company began in 1916 as a produce stand and has grown into one of the premier retail & wholesale businesses in Portland. We are a full-service grocery store, deli, meat department, bulk aisle and wholesale department.

SUMMARY: The Prep Cook is responsible for the timely and accurate preparation of high quality food items for the line, pantry or the production area of the main kitchen based on company standards. This is a full-time position.

DUTIES AND RESPONSIBILITIES:

· Prepares food orders as per established recipes/menus.

· Coordinates with Head Chef/Sous Chef for special functions and orders.

· Maintains a high standard of cleanliness and orderliness in the kitchen/food preparation stations.

· Maintains kitchen in a clean and organized manner to facilitate high volume production.

· Operates a variety of kitchen equipment.

· Washes, peels, cuts and shreds fruits and vegetables.

· Measures and mixes ingredients.

· Recognizes quality standards in fresh vegetables, fish, dairy and meats.

· Follows all health department and company regulations in regards to food and storage standards and safety.

· Handles and stores food in a sanitary fashion.

· Stores food in designated containers and storage areas to prevent spoilage.

· Ensures equipment and kitchen cleanliness. Performs other related duties as assigned by management.

QUALIFICATIONS:

At least 1 year of closely related experience in high volume or fast casual dining restaurant environment preferred.

Knowledge and understanding of safety, sanitation and food handling procedures.

Ability to work flexible hours including weekends and holidays.

Ability to perform duties in a team environment.
