Job Summary:

We are looking for a dedicated Raw Bar Cook II to serve our guests. Come show case your passion and creativity while working with the freshest raw seafood here at Buffalo’s our iconic restaurant here at Palmetto Bluff! Develop deep connections with our members and guests alike. Interaction with our members and guests is a requirement in this role to providing an exceptional culinary/guest experience!

You will learn to create and plate artful raw seafood dishes as well as shuck oysters while plating and serving in our guest facing raw bar. This role will contribute to Palmetto Bluff by being an ambassador of the club and culinary department.

Job Essential functions:

Oversee raw bar station.

Set up and break down of stations

Ensure freshness and quality of raw bar products, ensure ice is well stocked.

Prep raw bar items as needed, including but not limited to oysters, mussels, clams, and more.

Maintain cleanliness of station, avoid cross contamination, especially of allergens.

Operate ethically to protect the image of company.

Maintain a clean, safe environment in the dining room and all service stations at all times.

Maintain a good working relationship with others by promoting teamwork and fostering a harmonious working climate.

Helping with pastry/desserts as needed throughout services.

Performs other duties and responsibilities as required or requested.

Qualifications:

2 Years minimum experience in a similar position

Knowledge of sanitation practices, weights and measures, and various cooking techniques

A passion for food, wine and service

A strong sense of urgency

A strong culinary background

Superior communication skills (both written and spoken)

A desire for growth

A focus on hospitality and guest rapport alongside development of a regular clientele

A rigorous attention to detail

Adaptability to the fast-paced working environment

Physical Requirements:

Must be able to bend, stoop, squat and stretch to fulfill tasks.

Must be physically able to lift and carry heavy trays and equipment as well as delicate china and glassware.

Up to 50 lbs. Also, you must be physically able to walk without assistance on various surfaces for an extended period of time.

This position requires manual dexterity, grasping, writing, standing, sitting, walking, repetitive motions, bending, and climbing.

Must be able to speak, read and understand English phrases and cooking directions.
