Position Summary:

This role will be to collaborate and bridge work between the Food & Beverage, Product Development, and Operations teams throughout the develop and deployment of projects. This role will work closely with the Traveling Director Fleet Culinary Chef along with the shipboard R&D Chef.

A substantial portion of this role will be to engage with teams; by attending cross-functional product development, supply chain, and consumer insights meetings, creating notes and work ideas into working concepts into next steps and help drive outcomes using a series of internal workflows. These projects include shoreside, shipboard and island-based projects.

This role will report to the traveling Director of Culinary Operations with a dotted line to the Sr Director of Culinary and Ops Excellence..

Essential Duties and Responsibilities:

Collaborate with Food & Beverage, Product Development, Supply Chain and Operations in the innovation product development process of all types of products and cuisines.

Create ideas into working concepts by working closely with shipboard development R&D Chef to bring ideas/concepts to life. Help create, develop, and drive new menu items and recipes.

Owns shoreside run of shows and various tastings/meetings including gold standard evaluations.

Attend cross-functional product development, procurement team meetings and maintain the culinary development/launch calendar and trackers and help drive outcomes.

Helps lead change effort between shoreside and shipboard teams.

Develop cook times for equipment including technical programming and accessories for each.

Responsible for test kitchen management/organization, schedules, consultants, inventory, purchasing and delivery.

Manages the daily Test Kitchen schedule for all users including other brands.

Work with local talent agency to schedule contractors to fulfill project needs.

Partner with shipboard R&D Chef on various food, equipment and smallware requests.

Manage new product or bench/production samples to include tasting/tracking of each including product tracker, through to informing procurement on decisions made.

Supports special culinary based projects or other similar assignments for continuous improvements.

Attend first production run of new products as needed to confirm product matches spec.

Manages and assists in documenting fleet culinary recipes and SOPs as part of routine workflow with F&B analyst.

Manage/support scale up projects and shipboard testing including various food and equipment prototypes.

Manages culinary photography, media, and videos and various culinary training needs.

Assists in onboard culinary training/culinary rollouts.

Assists/support any culinary needs for all groups and charters.

Point on nutritional/allergen requests from guests/access teams.

Stays up to date on trends and new ingredients or equipment.

Attends food and equipment shows as needed with approvals.

Qualifications, Knowledge & Skills:

Degree in Culinary Arts is preferred or equivalent professional experience.

Five years progressive culinary management experience.

Experienced chef with demonstrated history of working the restaurant industry.

Excellent organizational and time management skills to effectively manage multiple tasks simultaneously.

Initiative-taker, innovative and ability to multitask.

Maintains a positive attitude under pressure and motivate team.

Must possess a passion for excellence.

Must be knowledgeable on HACCP controls along with proper storage and use of food.

Computer skills: excellent in Microsoft Office, Crunchtime and POS.

Excellent verbal, written and public communication skills.

To successfully adhere to the responsibilities said, this individual must be prepared to travel as needed, appx up to 30%, 10 days at a time.

Must be initiative-taking, conducting tasks quickly and accurately. Ability to write reports which are clear and concise, outlining solutions and recommendation of actions. Easily able to manage own projects, project trackers and personal calendar.

Must have excellent business acumen, and superior organization skills and help drive decisions with own team, cross-functional teams, and executives.

Effective communication skills to effectively interact with staff, management, suppliers, and executives.

Exceptional knowledge of culinary techniques, recipes, and presentation standards.

Excellent communication and people skills
