Job Description

The Control Room Operator is responsible for the efficient operation of the distillation and cooking processes. This position reports to the Distillery Supervisor and is a member of the United Food and Commercial Workers Union Local 10d.

Summary/Objective

As a Control Room operator this position is responsible for the efficient operation of the distillery control system and equipment on a rotating shift basis. In addition, this position will provide coverage for the Grain Unloader on weekly day shift Monday through Friday 5:00am – 1:00pm (Flexible). Operator role as needed on day shift. Staffing coverage will be based upon seniority within the Control Room position. The Control Room Operator conducts job duties in a manner that demonstrates a strong food safety culture which ensures the safety and quality of our products.

Major Responsibilities Include - 90%

Interact with the distillery control system to efficiently operate all portions of the distillation, cooking and tank farm procession as outlined in Standard Operating Procedures (SOPs) including but not limited to opening and closing valves, starting and stopping pumps and entering or changing data.

Execution of the following processes/ operations per the outlined SOPs:

Whole grain handling and selection of silos for grain receipts

Milling

Mashing

Cooking

Preparation and transfer of yeast room lactic, dona tubs and collection of samples

Distillation

Tank Farm

Addition of enzymes during the fermentation process

Cleanup and sanitation of masher, yeast tubs, cookers, stills and doublers with caustic soda & citric acid.

Performs general preventative maintenance duties as required.

Conduct periodic physical inspections to monitor the production process and report any deviations from outlined SOPs.

Manually operate various types of valves, pumps and other equipment associated with the distillery processes, as needed.

Thorough Understanding of all product piping, steam piping, water piping, stillage piping, caustic piping.

Input work orders into Limble software maintained for equipment repairs.

Coordinate maintenance call-ins on off-shifts to minimize down time.

Data Collection & Sampling

Collect production samples and perform analytical test; report any results that deviate from expected norms as outlined in SOPs.

Record data in logbooks and Ignition software including cleaning logs and other logs.

Collect Base Loss Samples

Work Area Cleanup

Responsible for work area cleanup of yeast room, dona tubs, mill bin structure, cookers, distillery floors, and walkways outside of the tour route.

Each Operator is responsible for keeping their work area clean, to standards set forth by management and of a food manufacturing facility.

Safety & Compliance

Abide by all EPA and OSHA rules and regulations.

Follows all applicable safety rules for assigned duties including reporting any work-related injury at the time of injury to the supervisor.

Operates equipment in a safe manner — considering persons, buildings, or other equipment that might be endangered or damaged because of negligence.

Maintain an environmentally clean and safe workplace.

Other Responsibilities - 10%

Preform the Grain Unloading job duties as needed on overtime - See separate Grain Unloader job descriptions for all duties.

Qualifications -

Required Competencies

Must have excellent interpersonal skills with ability to communicate all levels of employees/staff/vendors/visitors.

Strong organizational skills, the ability to handle multiple tasks simultaneously, maintain flexibility as necessary.

Ability to build and maintain positive relationships.

Ability to adjust work schedule and work overtime as required to maintain an efficient operation and meet weekly/daily work schedules.

Must promote and participate in a teamwork approach regarding union, non-union and management collaboration.

Ability to adapt to changing work requirements and conditions.

Education and Experience - Required

Must be at least 21 years of age

High School Diploma or GED

Basic mechanical skills

Basic computer data entry skills

Valid driver’s license and clean driving record

Education and Experience – Preferred

Previous industrial experience

Rotating Shifts - 7 days 1st shift, scheduled off 1 day

7 days 2nd shift, scheduled off 2 days

7 days 3rd shift, scheduled off 4 days
