About the job
Manage the culinary activities of their state-of-the-art galleys and maintain food cost at reasonable levels without affecting quality and standards.
Prepare international cuisine in multiple venues while enforcing USPH and HACCP procedures for sanitation and cleanliness.
Other responsibilities include monitoring workstations and staff for adherence to all procedures while managing and training a large culinary staff to consistently meet performance standards.
Work in cycles of 4 months on 2 months off
7 day work week approx 10 hour day while onboard
Requirements
Executive Sous Chef or higher on cruise or large five star - at least 350 rooms and 5 outlets
Stable track record
International experience
Able to work away from home at 4 months at a time
