TITLE: Sous Chef/Culinary Specialist

CLASSIFICATION: Exempt

DEPARTMENT: CREA (Culinary Research and Education Academy)

POSITION REPORT TO: Culinary Director, CREA

The Culinary Research and Education Academy (CREA) is the global, highly acclaimed diverse food research and development organization specializing in all segments of the food industry.

CREA covers all ecosystems of the food industry including, but not limited to, menu development, ingredient procurement, culinary techniques, kitchen design, operations, logistics, food safety, food quality, lab analysis, and training.

Cuisine Solutions is looking for a Sous Chef who will train other chefs under the CREA department using the sous vide technique. The right candidate will also be versatile with administrative work and be willing to provide back up support at the Taffer's Tavern franchise located in Washington, DC.

EXPERIENCE:

Minimum 3 years' experience as a Chef and/or Sous Chef

Proven ability to speak culinary terminology with Clients, Executive Chefs, Kitchen Managers, and Restaurant Owners

Front of house experience is an asset

Familiarity with food safety rules

Serve safe certification

Excellent kitchen skills

Strong communication skills

Culinary experience and ability to apply technical learned knowledge

Good knowledge of restaurants or food service operations

JOB RESPONSIBILITIES:

Work with CDC and Exec sous for the creation and preparation of dishes using sous vide product.

Responsible for plating and garnishing food to ensure it is visually appealing.

Speak with clients regarding various types of appetizers, entrees and desserts; discuss ingredients and methods of preparation.

Knowledge of sous vide technique.

Know the compositions and attributes of Cuisine Solutions products.

Must be able to understand and follow GMP, company food safety and quality policies

Must be able to travel to support CREA services at different venues.

Will support day-to-day operations necessities to ensure our guests and team members are satisfied and return. You will support the front of house and back of house team members, ensuring quality of service and products meet high standards, and ultimately drive guest to come back. This role will also involve interacting with guests and team members to ensure a premium service is always delivered.

Performs other duties as may be assigned by management.
