Job Description

Supervisors report directly to F&B Manager and Executive Chef

Work with Executive Chef to ensure all Cafe staff are properly trained and are following all food safety and sanitation guidelines

Ensure Café and Simulcast bar operations run smoothly and efficiently

Monitor and maintain adequate Café and Simulcast bar inventory levels

Ensure that recipes and food preparation instructions are followed correctly

Monitor food served from Café for quality and presentation

Monitor all drinks served from Simulcast bar are served fresh and observe for presentation

Ensure that all equipment is in good working order and report any issue to Executive Chef/F&B Manager at both Café and simulcast bar

Maintain the Café area and simulcast bar are clean and tidy at all times

Assist in informing Executive Chef of any Café issues

Working knowledge of food safety and sanitation standards for both Café and simulcast

Excellent communication, problem-solving, and organizational skills

All supervisors must attend a weekly meeting with the f & b manager and the executive chef

Able to work flexible hours, including evenings and weekends

SERV Safe Food Handler certification (preferred) or strong knowledge thereof

Manage and demonstrate strong leadership skills

Manage staff and oversee production of Meadowland Café and Simulcast bar

Have knowledge a POS system, cash handling and functionality for servers, cashiers and bartenders

Train new employees per procedures, state standards, and SERV SAFE standards.

All employees of Meadowlands Racetrack must be TIPS certified before being scheduled

Execute opening and closing duties including HACCP food/ kitchen safety inspections and associate development.

Assist and monitor cooking and chill temperatures; also, HACCP paperwork to ensure all entries are correct.

Help the executive chef to ensure and maintain kitchen cleanliness in accordance with New Jersey Board of Health regulations.

Be sure all employees are on time at stations at the start time of scheduled shifts for Café and Simulcast bar

Recognized for professionalism and demonstrating the ability to communicate effectively with staff and customers.

Ensure ALL Meadowlands kitchen/VIP staff, cashiers and bartenders, are always in proper uniform (white or black Chef coats, black pants, black shirt, non-slip rubber bottom shoes), Black polo logo shirts for cashiers and black button down for bartenders

Members must wear hair nets or hats to prevent the hair from entering food

Assist Café kitchen staff in high volume times when needed or instructed by Executive Chef/F&B Manager.

Kitchen Supervisors must know the operations and duties of the entire Café and simulcast bar and all its employees

Setting regular cleaning standards for the Café and simulcast, verifying that staff is maintaining sanitation levels which include glove use and aprons, as well as all guidelines at the bar

Ensure ALL staff, in all areas of Café and Simulcast, take the allowed breaks and not during high volume times and accordingly.

Phone use is strictly prohibited among ALL staff including supervisors within the kitchen during your scheduled shift. Phone use is allowed outside of the work zone. Use of personal phones cannot be abused while on the clock.

Supervisors must demonstrate an equal work environment and maintain the integrity of Meadowlands Racetrack. ALL staff must adhere to Supervisors delegation or be subjected to the proper process of disciplinary action via Supervisor.

Oversee and ensure that Café rules, policies and procedures of Meadowlands Racing and Entertainment are being followed.
