Chef Jim Noble comes from generations of people who love making fried chicken and chicken sandwiches, but his Great Aunt Beulah’s was hands-down the best. Born in 1906, Aunt Beulah (Beaut, for short, which is why the sandwich is named “The Beaut”) was no-nonsense but all-loving, especially to the kids in the family. They playfully called her Bossy, but she paid no mind. The way she saw it, and the way we see it today, “it’s okay to be bossy, as long as you’re right.” And she was always right–especially when it came to fried chicken.
