Overview:

Elderwood is currently seeking a Lead Cook to coordinate and oversee the activities of other dining services personnel involved in direct preparation of foodstuffs for service to residents, staff and visitors. In addition, this person is responsible for functions related to recipe use, amounts to prepare and quality control.

Responsibilities:

Assists and directs kitchen staff involved in the preparation, cooking, and execution of meal service to residents.

Participates in menu planning, recipe development, and appropriate utilization of foodstuffs consistent with resident needs/requests.

Coordinates prep/pull amounts and procedures for meals based on facility production needs including therapeutic and modified-consistency diets.

Oversees and ensures appropriate methods of food preparation and cooking by staff cook(s).

Ensures adherence by all meal service personnel to correct portion sizes based on production sheets and resident meal tickets.

Conducts quality assurance audits for taste, temperature, and appearance on all prepared food items prior to service to residents at each meal.

Ensures that sanitation and safety standards are met in the preparation, cooking, and delivery of all food items.

Leads training programs for kitchen staff specifically focused on the preparation and cooking of foods.

Maintains cleanliness of food preparation equipment and the general kitchen work area.

May participate in inventory and ordering of food items.

Attends in-service programs and department meetings as required.

Performs all job duties according to safety rules and practices required for this job position to ensure the general safety of staff, residents and visitors of this facility.

Provides information to the Director and Supervisor on the work performance of Cooks.

Demonstrates knowledge and understanding of all policies and procedures and ability to reference them.

Performs other duties as assigned by the Director of Dining Services or Administrator.

Qualifications:

Minimum of 18 years of age required.

High school diploma or equivalent preferred.

Minimum of 3 years cooking experience required; 5 years preferred.

ServSafe certification required.

Supervisory experience preferred.

Working knowledge, and experience in, the preparation of therapeutic and modified consistency diets required.

Experience in batch cooking and recipe development required.

Working knowledge of CMS and DOH regulations as they relate to food service required.

Experience with the DOH survey process preferred.

Excellent verbal and written communication skills required.

This position requires regular interaction with residents, coworkers, visitors, and/or supervisors. In order to ensure a safe work environment for residents, coworkers, visitors, and/or supervisors of the Company, and to permit unfettered communication between the employee and those residents, coworkers, visitors, and supervisors, this position requires that the employee be able to read, write, speak, and understand the English language at an intermediate or more advanced level.
